The Quarantine Kitchen: Easy Carrot Cake

Ingredients

150ml veg oil
2 eggs
1 tsp bicarbonate of soda
1 tsp cinnamon
200g grated carrots
225g sugar
180g self raising flour

Method

1. Mix the dry ingredients with the carrots
2. Combine the wet ingredients
3. Mix together and pour into a 27cm cake tin lined on the bottom and edge with baking paper
4. Bake at 160°C for 1 hour
5. Allow to cool, and enjoy – it really is that easy!
